Longtime itinerant sommeliers Nathalie and Laurent opened this bar to get away from an elitist approach to wine. The selection is staggering: 1,700 labels, each described in the simplest, most approachable terms. The food comes from local South West artisan farms: dried duck breast, foie gras, and their famous blood sausage. I really love the natural wines from Domaine Ledogar that they carry, a Carignan from very old vines, or their pinot noir, “pinot chio,” from Mas du Chêne.
