At the late 40’s, Mr and Mrs Paul take over the place and retain the essential such as the phone cabin, still present. Artists or anonymous, patrons or foreign customers, a table was always available for them.
Since 1988, Mrs Thiebaud preserved all this praxis. Daniel Karrenbauer continues to turn this tradition into what we can call the ‘family spirit’, at Chez Paul Restaurant.
