We offer a lovely day in the Tuscia countryside, learning how to make the best homemade pasta. You will also discover traditional dishes not found in shops, restaurants or books.

We will have dinner together with appetisers and desserts we have prepared as well as the pasta you will have prepared.
You will also have the opportunity to try dishes cooked in our wood-fired oven (weather dependent)
- Vegetable dishes
- Bread
- Focaccia Pugliese

We make pasta exclusively with durum wheat and either water/eggs, except for filled pasta. Examples:
- Orecchiette, Maccheroni al ferretto, Trofie, Malloredus and many more
- Egg: Tagliatelle, Pappardelle
- Green: Foglie d’ulivo
- Filled pasta: Culurgiones, Cappellacci, Tortellini

If you want to try a particular shape, let us know when you book and it will be considered. If you come as a group you can make a more specific request.

I've been cooking since I was seven. I'm from the region of Apulia and my aunt taught me how to make everything from pasta to focaccia as well as delicious ways to prepare vegetables that I just don't see people demonstrating. I have carried forward this tradition for fifty years.
In the UK I've taught Regional Italian Cookery to help students develop practical cooking skills as well as how to use different tools to make pasta shapes. I also have extensive knowledge of different types of flour.
My family and I live in the countryside with our cats near lake Vico. We are fluent in English.

This experience will be hosted at our home, a large farmhouse. The pasta preparation will take place inside our enormous kitchen with plenty of room for people to work without bumping into each other.

Dinner will be outside in our garden, but if the weather is not ideal we will eat in our dining room with a large table.

This was an amazing experience we were physically involved throughout the session which will be a lifetime memory and experience being able to make my own pasta and other delicious dishes from the south. Maria Antoinette and family were so friendly and welcoming it felt like we had known them for a long time the whole family and home were very warm. The session itself was great value for money. I definitely recommend sessions with Maria Antoinette they’re worth the while. We took a train ride to her place and we were picked up from the station and dropped off later. The whole dinner experience was amazing and delicious dishes were enjoyed.

Our experience was magical. From the moment we walked in the door, we felt very much at home. Maria and her son Mark run the experience with added help from Mark’s girlfriend Patricia and Maria’s husband David. They all added their special touches to the experience. The class is intimate in that it is like you are invited guests to their home. They choose to keep their classes small (2-6 people) and prefer groups where they know each other as in couples, family or friends as they believe that creates the intimacy with their family that makes this unique experience. To us, if felt like we were invited to dinner, had great conversation with old friends, enjoyed Italian human connection and left feeling a bit more filled in our souls. The class itself wasn’t so much of a teacher/student class but more of a working alongside/mentoring process where it feels you are all cooking together. Maria and Mark are both knowledgeable in the field, Mark learning from his mother who has formal training and who both teach English in Rome. We felt that the educational aspect of the ingredients was exceptional and the learned skill of shaping pasta was unique and personal. Although we did not get to experience the outdoor eating area due to weather we were quite enamoured by the property itself and the story behind the purchase, renovation and passion the put into the home...make sure you ask them about it. Overall, we feel that we are walking away with new friends and a newfound desire to learn more about Italian cooking, ancient recipes and a desire to create community with whomever crosses your path. This absolutely great value for your money, in fact I think they can charge more. We left feeling both full and very fulfilled.

I can’t begin to explain what a special experience this was. From the moment we drove onto the property Maria and made us feel like part of her family. Maria and Mark expertly led us through the pasta making process with patience and ease as we fumbled, never getting frustrated but explaining each step perfectly. They shared not only their family recipes but stories that made the recipes even richer. Everything we cooked with was fresh, organic and mostly straight from their beautiful garden and topped any meal we enjoyed in restaurants from Tuscany to Umbria. This was the true highlight of our trip and we would recommend it to anyone. Thank you Maria and family!
