It's all about Sourdough!!!! You'll learn about the sourdough bread journey from beginning to end. To learn to be a baker, you must think like a baker. You will jump right into weighing the ingredients, as there is plenty of time to talk about theory, ingredients and techniques, as the dough raises. You will learn kneading, folding, shaping, scoring and baking your amazing loaf of bread. You will add a small amount of freshly milled grains, so you will also learn how to work with freshly milled grains to make a difference in your bread. You will take special care in shaping, as this is a skill which some may struggle. You will bake the bread in a cast iron pot, to achieve a great ear and open crumb structure. You will have your questions answered, so that a lifetime of bread making will continue. I do have a schedule set in the afternoons, but am more than happy to discuss timing changes that are suitable for your schedule.
As a classically trained chef, I have been in love with food forever! As a child, I learned to bake bread watching my mother. As I grew, so did my love of bread. Five years ago, I moved to Louisville to open the wildly successful wood-fired pizzeria MozzaPi. I helped to create their Community Supported Bakery, as well as developed the Artisan Bread School. I have returned to Butler, to my roots and teach classes out of my log cabin, that my husband and I built by hand. With over 5 years of teaching experience, I have shared my hands on techniques with hundreds of bread aficionados. I have been featured on the PBS Series Tastemakers - Grounded, speaking of my passion for baking and love for local grains. There are so many reasons to learn to bake and sharing this experience with others, allows them to share it with those they love.
